Make a salad and some garlic bread on the side and you're set to feed your family (or roommates). You can also have leftovers for a light lunch, yum!
Ingredients
2 tbsp olive oil
1 1/4 lb shrimp
3 cups whole wheat penne pasta, cooked
3 cloves garlic, minced
3/4 cup white wine
1 1/2 cups grape tomatoes, halved
3 cups spinach, chopped
Basil, finely chopped
Salt and pepper
Directions
- Heat olive oil in a skillet over medium high heat. Add shrimp and cook until pink on both sides, about 2 minutes.
- Keep liquid in the pan, but remove shrimp. Add garlic and cook for about 30 seconds. Add white wine and stir for a few minutes. Add tomatoes and spinach, cook until spinach has wilted.
- Put shrimp back in the pan to warm through and season with salt and pepper.
- Mix with cooked penne pasta and serve.
