Shrimp Penne Pasta

This pasta dish is quick and simple. Using shrimp makes this meal seem a little more upscale. Honestly, you can use any kind of pasta you have on hand and it will still come out delicious. I always recommend using whole wheat pasta because it's such a simple way to add a serving of whole grains to your day. I'm not sure if I have mentioned this before, but my mom and sister are extremely picky and they both like this dish. 

Make a salad and some garlic bread on the side and you're set to feed your family (or roommates). You can also have leftovers for a light lunch, yum!



Ingredients
2 tbsp olive oil
1 1/4 lb shrimp
3 cups whole wheat penne pasta, cooked
3 cloves garlic, minced
3/4 cup white wine
1 1/2 cups grape tomatoes, halved
3 cups spinach, chopped
Basil, finely chopped
Salt and pepper

Directions

  1. Heat olive oil in a skillet over medium high heat. Add shrimp and cook until pink on both sides, about 2 minutes. 
  2. Keep liquid in the pan, but remove shrimp. Add garlic and cook for about 30 seconds. Add white wine and stir for a few minutes. Add tomatoes and spinach, cook until spinach has wilted. 
  3. Put shrimp back in the pan to warm through and season with salt and pepper. 
  4. Mix with cooked penne pasta and serve.
